OK, being alone is no fun, especially when it comes to cooking. It seems that most of us are not eating the way we used to. So, let's hear it what's your favorite easy recipe for one. ?? Sorry, Ted, when it's this hot all I can think of is salad. Tonight I think I will make a salmon salad.

We are having fish (dipped in egg and rolled in bread crumbs and baked)
Roasted potatoes and salad

One of my favorites is Beans and rice. I brown some chopped beef in a frying pan while cooking a cup of rice, after the beef is browned, I add some kidney beans, or black beans to the beef to keep warm then I add the rice to the beef & beans, and let it simmer a little while. Add garlic salt to taste, a little pepper, and serve.

It has to be good, my grand son loves it.

Sounds complicated, but real easy !!!

It all sounds good to me....LOL I have 1 salmon steak on the grill as we speak....LOL

Shorter, that sounds good to me too. I grill all year, My grill is under my family room, behind the house. so I can use it any time, and I do. Enjoy your dinner. !!

Ted we love beans and rice too but I just put the beans and a small piece of beef roast in the slow cooker just before I go to bed and leave it cooking when I leave in the morning. When I come home I turn the slow cooker up on high and shred the beef and put a cup of beans in the blender that way they are thickened.
If it is too many just divide the leftovers into freezer bags and freez for the next time you are in the mood for beans and rice.

Ted, Have you ever tried sausage & rice casserole? Brown the sausage 1pound, cook 1&1/2 cups rice. Mix together with 1 lg can cream of mushroom soup, 1/2 cup celery or 1/2 tsp celery seed Top with shredded chedder cheese, & bake in a 350 over for approx 30 min.
Quick, easy, & very good. You can add different seasonings to your taste if you like.

You can add salsa, avacado, cilantro, lettuce, tomatoes or whatever you like and place it in a tortilla with the combination of beans, rice, hamburger and have a great burrito or without the tortilla a good taco salad. YUM

The hottest day of the year and I turned on my oven to fix mini meatloaf Italiano--It was so hot--after I ate I had to leave for a few hrs.

Will not do that right away again.I have 3 more meals saved though as I used 2 # sirloin beef--in place of hamburger w/all the fat.

I have some great recipes---just too busy to cook most of the time.

Boil some water, put in macaroni, or some kind of noodles...drain & cool ad tuna fish , chopped onions, peppers,etc. mix using a little mayo ( to your taste) sit back with a beer and say.....what ever?

Ted, there is also a recipes thread further down that has some good recipes on it that I started quite some time ago. So may want to look for that one and write those down too.

My ex son in law cooked for all of us tonight, we had pork loin and sausage on the grill with fresh green beans, fresh squash, cabbage, and field peas. It was an excellent meal tonight. And it was even better because I did not have to cook it.
