|so, a male friend its going to come to my home for a few days, we have planes to see a movie play soneting and well a friends date so im tinking what can i prepare for us somting elegant but not to formal ... what do u suggest chicken... fish ... ??? for the first nigth.|

|A lemon chicken that's a little on the sweet side is a good date food. Served with some rice (no garlic or onion, just lightly season it with some fresh herbs)|

|Second the Chicken and rice. Not too heavy on the stomach and easy to prepare. You can tart it up to make an elegant presentation, or leave it really simple.
I make an herbed rice- same seasoning as on the chicken, add to the rice while it's cooking (in chicken stock not water). A bit of sage, basil, paprika, celery seed, rosemary, thyme, and a pinch of salt & pepper into the stock just before the rice goes in.
For the chicken, split it at the spine, cut out the breast bone & cartilage and flatten it out (called spatchc*cking). Season the underside and under the skin, as well as the skin too, then roast on a rack. About 1.5hr at 350* for a 5lb bird.
To tart it up some make lightly saute'd broccoli florets (saute in olive oil), and a cream sauce (roux + chicken stock + cream) to pour over the broccoli and chicken before serving.

Man if it was me? I know it's a long drive but it's worth it. Head down to Ensenada to the Wharf. They have a fish market to die for. I've been going there since I was about 14 yrs old. The sea food is cheap and it's fresh. The smoke fish there is what about 160 Per kilo? Damn it's good. Just stay in town at Rudy's Motel. He is cheap and it's about 3 blocks or so from the fish market.
